This is a coffee with a clean, aroma of ripe pineapple.
The character is pretty amazing, with hints of yellow mango and caramelized candy.
Los Lajones is Panama's highest coffee farm. The coffee grows at extreme 1800-2300 above sea level. Berries ripen slowly and the harvest goes forward to late spring. The farm is completely organic and Graciano has - because he is a chemist - researched until he reached today's process method. The farm was also the first in Panama, which became organically certified. Through a project that has included an entire scientific team of biologists, ornithologists, botanists, etc. so Graciano has inventoried the diversity of animals, insects and plants that live on the farm. By comparison, they found 40% more insects, 25% more bird species than on a typical plantation.
All coffee grows in the shadow of trees. The farm has 15 acres of Caturra trees and 17 hectares of Catuai trees. Graciano has also planted 23 hectares of Geisha, whose first harvest, we hope to see in 2012. It will become the world's highest growth Geisha tree.
