Panama Cruz - Above The Honey 250g

Super sweet coffee with crystal clear ripe red fruits combined with rich high flavor notes reminiscent of acid from orange peel.

The honey process highlights coffee's natural fruit character and we find the fermented berries, orange liqueur and milk chocolate in coffee. The process requires no water and is the most environmentally friendly available. No water, no carbon dioxide emissions, no energy is used. Just pergamino which may dry in the sugar so that the maximum sweetness is reached.

Los Lajones is Panama's highest coffee farm. The coffee grows at extreme 1800-2300 above sea level. Berries ripen slowly and

the harvest goes forward to late spring. The farm is completely organic and Graciano has - because he is a chemist - researched

until he reached today's process method. The farm was also the first in Panama, which became organically certified. Through a

project that has included an entire scientific team of biologists, ornithologists, botanists, etc. so Graciano has inventoried the

diversity of animals, insects and plants that live on the farm. By comparison, they found 40% more insects, 25% more bird

species than on a typical plantation.

All coffee grows in the shadow of trees. The farm has 15 acres of Caturra trees and 17 hectares of Catuai trees. Graciano has

also planted 23 hectares of Geisha, whose first harvest, we hope to see in 2012. It will become the world's highest growth Geisha

tree.

Process:The berries are picked by hand when fully ripe then peeled the flesh away. The beans are dried in its sugar stocks, on African

elevated bed directly on the farm for about 10 days. Then transported to the processing station where the best beans are sorted

out. Beans are vacuum packed before shipment to the roastery in Tullinge.
